Beef Noodle Recipe by Miss Panda

Chinese Beef Noodle soup is one of the most popular dishes in China, Hong Kong and Taiwan.  There are different variations of this recipe depending on the location people are from but the popularity of this soup is unbeatable.  There are noodle shops specialized in beef noodle soup all over Taiwan.  The signature beef noodle soup from different restaurants compete annually for the championship of the best noodle soup.  This is a must try dish and once you try it you might get addicted to it.  I am serious about this!

This recipe in Chinese is formally called “Beef Noodle” –  niú ròu miàn – 牛肉麵 (in traditional Chinese characters) | 牛肉面 (in simplified Chinese characters).  The only difference is the word, “noodle” |.  Where is the soup then?  Well, this is a good question.  You can actually order “Beef Noodle Soup” at a restaurant – niú ròu tāng miàn – 牛肉湯麵 (traditional) |牛肉汤面 (simplified) and that means you order the noodle with the soup but without any beef pieces in your bowl.  Therefore, the price is cheaper.  Does that make sense to you?  So if you want to order a bowl of noodle with soup and the beef pieces you will order “Beef Noodle” –  niú ròu miàn – 牛肉麵| 牛肉面.

Beef noodle recipe is also a diverse recipe.  There are three main styles of an amazing bowl of beef noodle.  There are the style from the ChineseMuslim “huí” ethnic group (回族), the variation from sìchuān (四川) province, China and the popular recipe developed in Taiwan(台灣).  The Beef Noodle recipe in Taiwan was first created by veterans who fled from mainland China to Taiwan during the Chinese civil war (in the 40s).  It is a dish from home in China with a touch of a new home in Taiwan.

How do you know what style a Beef Noodle is?  You can tell by looking at the restaurant signage or the menu.

清真牛肉麵 [qīng zhēn niú ròu miàn] is Muslim Beef Noodle.  Pure clear soup, mild and heavenly!

四川牛肉麵 [sìchuān niú ròu miàn] is Sìchuān Beef Noodle.  Spicy!!!

紅燒牛肉麵 is Braised Beef Noodle Taiwan style.  Mild or light spicy!

Tomato Beef Noodle Soup

 

  • 3 lbs beef shank (with or withoug bones)
  • 1 pot hot water
  • 1 tbsp cooking oil
  • 5 tbsp soy sauce
  • 1/4 tsp white peopper powder
  • 1/4 tsp black pepper grounded (optional)
  • 1 bag Chinese herb bag for beef stock (optional (available at Asian grocery store))
  • 1 white or red onion
  • 6 tomato
  • 1/4 lb white mushroom (optional)
  • 2 tbsp green onion
  • 1/4 tsp sesame oil
  • 1 tbsp ginger (crystalized ginger works also)
  • 6-8 cups water or chicken stock
  • salt
  • 2 cups bok choy
  • Chinese chilly sauce (optional)
  • 1 package Chinese flour noodles (fresh or dry)
  1. Quarter the onion. Set aside.

    quarter the tomatoes. Set aside.

  2. Place beef shank pieces in the boiling water for 3 minutes.

    Take out beef shank pieces and pat dry.

    Heat the oil in a dutch oven. Place beef shank pieces in and brown.

  3. Add add soy sauce to color all sides of the meat.

    Add white pepper. Add black pepper. Add ginger.

    Add onion. Mix and stir all the ingredients in the pot.

    Add tomatoes.  Add Chinese herb bag.

    Add water or chicken stock. High heat.

  4. Bring soup to boil. Cover and turn heat to medium low.

    Cook for 2.5 – 3 hours until the meat is tender.

    Add mushroom to the soup in the last 30 minutes.

  5. Cook Chinese white flour noodles i(fresh or try) in a separate pot according to instruction on the package.

    Add noodles to each bowl.

  6. Add soup to each bowl.

    Add salt and pepper to taste.

    Add a few drops of Sesame oil to each bowl. (optional)

    Add a few green onion to each bowl. (optional)

    Add Chinese chilly sauce to each bowl. (optional)

    Add a few green vegetables (Bok Choy) to each bowl.
